Our Colombia Huila La Argentina is a stunning showcase of extended fermentation done right: radiant, fruit-forward, and irresistibly aromatic. Grown by thirty smallholder producers in the highlands of La Argentina, Huila, this lot represents the harmony of meticulous processing and exceptional terroir. At elevations of 1600–1900 meters, a blend of Caturra, Variedad Colombia, and Castillo cultivars develops extraordinary sweetness before undergoing a 40–50 hour controlled fermentation that brings its red-fruited character vividly to life.
Expect a bright, juicy cup layered with notes of pomegranate, raspberry, and apple, framed by gentle mulling spice and the comforting warmth of spiced cider. As it cools, a delicate tea-like structure emerges, giving clarity and lift to its complex sweetness. The fragrance evokes red jelly candy and honeyed fruit punch, while a hint of cinnamon lingers softly through the finish.
