Grown on the volcanic slopes of Santa Ana, this washed SHG/EP lot captures the clarity and sweetness that make El Salvador one of Central America’s most quietly exceptional origins. Smallholder farmers cultivate Bourbon and Pacas varieties at high elevation, where cool nights and mineral-rich soils slow development and concentrate flavor. After careful hand-sorting to EP standards and a clean washed process, the result is a beautifully structured cup that reflects the region’s natural elegance.

We were surpised with this one. Expect a comforting, dessert-like sweetness anchored in dark chocolate and caramel, lifted by a gentle, fruit-driven acidity. The medium body carries a smooth, rounded texture that makes this coffee both easy-drinking and nuanced. Classic Santa Ana character: refined, balanced, and quietly complex.
